They are very high in Linoleic acid, which prior to the industrial processes required for the extraction of seed oils, was not consumed in high quantities. Today it can account for up to 60% of fat calories. Before 100 years ago it was generally at most 5% of fat calories unless you eat lots of olive oil, then it can be as high as 11%. Coronavirus take advantage of the metabolic cascade that results from the conversion of Linoleic acid to a more functionally valuable Arachidonic acid. The presence of significant tissue levels of Linoleic acid is prerequisite for the proliferation of the virus.

If the cows eat grains it can be as high as 7 or 8% based upon what i've read. Grass fed is typically between 1 and 4%
