The people who own the restaurants are Cantonese who literally escaped to here in the mid-20th century. They're not bad people, for the most part. They live in a small town, start their business and live their lives.

I get some of my "Chinese food" from trader Joe now like their orange chicken. I just bake it for about 20 mins in my toaster oven and then mix the chicken and sauce in a frying pan. Works for when I'm craving the deep fried and then covered in sweet sauce chicken.
Pretty much the main ingredients for most "Chinese" recipes consists of
>Onions sauce
>Sesame Oil
>Oyster Sauce
>Rice wine (I just substitute dry Sherry)
>Hoisen sauce
>Maybe five spice seasoning
>Chili paste or Sirancha
You should be able to find most of these ingredients in the "Asian" section of your local supermarket or Walmart. Also recommend using a wok to stir fry too even though you could get away with using any pan.

I used to get this orange chicken and spicy garlic eggplant from Trader Joe's. I used to get the spicy orange chicken and fried rice from Costco. For dining out, I used to go to Schezwan-styled restaurants.

Also if you want to make the chicken dishes that they make at the Chinese restaurant from scratch, make sure to use "dark meat" chicken like boneless chicken thighs. It will not taste the same if you use "white meat" chicken like chicken breast.
