Hospitals need people. You can do an EMT course fairly quick. Then there is stuff with no or little education requirements like patient transport, CNA, secretary, and 'financial counseler'(sit behind desk and take their insurance info then keep calling when patients don't pay their co-pay', materials, phlebotomy, EVS, security, and pharmacy technician. Pharmacy technician will usually require a certificate or something in a hospital though, just Walgreens and such that sometimes take fresh people with an interest. While doing these you can go on to study for nurse, medic, coding/billing, or supervisory/desky versions of others.
Outside of health care that would seem recession proof is law enforcement and corrections, power, and a hidden gem. Wastewater management. Few know about it or care to go into it.
