Canned beans don't ever expire. They just put a date on the cans to get you to rebuy at some point, but it's always edible. I eat canned beans that are 10, 12 years old all the time. Taste great and never gotten sick.

You're gonna have plenty of time. Dry beans are cheaper, soak overnight, bring to a boil for about 5 minutes, back the heat off and keep on a simmer for at least an hour, longer if possible, that seems to work for most beans. If it's gritty, keep cooking.

Get a ton of rice as much as possible, then get an assortment of different canned goods of whatever you like, a wide variety and tons of that too. Get some spices. Get tuna. Get spaghetti spaghetti sauce. Tons of Noodles and broth, high calorie good tasting junk food, breakfast bars, cereal, oatmeal. Paper products. If you want to go all out also buy tons of water, candles, hand crank radio, back packing stove and supplies.
