Different grades stop different calibers. In general. Plates stop up to 3 rounds of 5.56 or smaller. 1 round of 7.62. Anything bigger and you will wish they just shot you in the head.

Depends on the type of plate. Ceramics usually break, steel usually doesn't. The shattering absorbs force, so it's a tradeoff.

Depends. Ceramic is thicker, but lighter, and it will deteriorate a lot when struck. Steel is thin, but WAY heavier than ceramic, but it can withstand more hits than ceramic
