Boil them add water cover them add salt pepper at minimum, add some oil also if you have it, let them soak, make it to the consistency and softness that you desire.

Dried beans you soak them overnight 12 hours min. if they are really old fucking beans you soak them overnight+ in a water baking soda solution then rinse twice. then you use them in a recipe so if making rice and beans cook together same with soup. if making solo take rehydrated beans mix with a fat lard etc. and slow cook while stirring semi regular 1/2 way you can mash them for refried beans cook for 60 min. ALWAYS BRING TO A BOIL then dial back to simmer the boil kills any cooties.

Big pot of water add tough pork bits to the pot boil and simmer keep adding water if it becomes too thick. It does take time to cook but adding pork definitely makes it tastier.

Crock pot. Low heat. 12+ hours.
Drain water.
Add new water.
Add onions and ham hock, bacon, spices, peppers, whatever.
Add rice at some point.
Cook 12 more hours on medium or high heat.
Make cornbread.
Serve with shredded cheese.

depends on the meat but for say bacon I cook it up in a pan till almost crunchy then deglaze with a bit of chicken stock
CUMIN is always a good beaner spice as is bay leave.
any smoked pork will give it a great flavour

2) Brine (boil with two tablespoons of salt) for a few hours, drain then simmer till tender.

For rice do 2:1 ratios
Two parts water for everyone one part rice. So if you have 1 cup of rice do two cups of water. Add in a tablespoon of butter and some salt. I like a bay leave in with the water too gives it a nice lite herbal floral flavour to the rice perfect for basmati rice

This will yield dry/fluffy rice for sticky wet pussy rice add in 10% more water

After you soak them over night, rinse them and put in crock pot with ham or a leftover hambone. Add some onions, salt, pepper. Put lid on crockpot and cook for 8 hours. Make some corn bread in a cast iron skillet. Also good with a side of fried taters. Best damn meal ever. Sticks to your ribs.

Soak overnight (lots of extra water to soak up, fill a container 1/4 or 1/3 with beans and the rest with water) and boil the next day for 30-60 minutes. Cut one open to see if its done, there will be hard white stuff inside if it isn't finished cooking.
