I have seen border guards on duty having whatsapp open. So I think they just look at whether you are tagged as a criminal.
I know that Germany doesn't share flight data with the UK or anyone really. It's not allowed because of data protection reasons.

You're mistaken. Flight data is shared with the US. Look up "Agreement between the United States of America and the European Union on the use and transfer of Passenger Name Records to the United States Department of Homeland Security".
