you can eat for an alkaline diet or alkalize with baking soda but technically alkaline can be a sign of bad health and near death and fungus are found to decompose organisms with alkaline skin.

It's all on the variety and preparation. Unfortunately button mushrooms are cheap and easy to cultivate, so they make up a large amount of the average consumers experience. I'm not the biggest mushroom consumer, but I am fascinated by their life cycle.
