Most are like generic jpop. I'm not sure what series you're watching. The only two that really come to mind that are jazz are Cowboy Bebop and the Gunsmith Cats OVA. I hope you're not implying Cruel Angel's Thesis is jazz in any way.

You rarely hear saxophones in western music outside of jazz and blues though, and saxophones are very apparent in most jpop anime openings.

J pop likes to use different, more complex chord progression than american pop music. Jazz likes to play with music theory. The two are similar in that way.

I think you're confusing a song having a strong rhythm with it having anything to do with jazz. Or certain instrumentation. This is a pretty normal pop song. Not even jpop. If you go and listen to indie pop you'll hear millions of songs that sound really similar. This doesn't even sound much like older jazz like big band or swing let alone later jazz that doubled down on the experimental and adventuring aspect.

As some people have said maybe some chord's/chord progressions may be reminiscent of some in jazz but that doesn't mean that a song really has much of anything to do with jazz. Go listen to some Miles Davis and tell me that you hear even a small amount of anime openings that sound like that.
