Most are like generic jpop. I'm not sure what series you're watching. The only two that really come to mind that are jazz are Cowboy Bebop and the Gunsmith Cats OVA. I hope you're not implying Cruel Angel's Thesis is jazz in any way.

You rarely hear saxophones in western music outside of jazz and blues though, and saxophones are very apparent in most jpop anime openings.
