Not sure about how Saber works genetically because while the other two have great traits, Saber if she can have children would make those children crazy amounts of mana strong.
If Saber doesn't provide genetic boosts then I'd take Imaginary Numbers over Average One because affecting imaginary space is more useful than using basic elements. Though Rin and Sakura's existence really speaks credit to Aoi Tohsaka given Tokiomi is just a basic Earth/Fire fag so to have kids with such unique traits means her breeding stock must be amazing.

Saber and Rin are both precious and both have personalities that I absolutely adore. Sakura isnt bad or anything. Just very bland when compared to the other two IMO.

Saber's Dragon Core is vastly superior to Average One or Imaginary numbers and there is nothing to suggest that it cant be passed on.
And Average One is canonically way more useful than Imaginary Numbers. AO is valued way more highly in the clocktower than IN. AO is seen as winning the generic lottery for mages whilst IN is seen as something novel and interesting but with not much practical application
