The reason why One Piece's sales are dwindling and Kimetsu's are rising is simple. Because One Piece has gone on for far too long with no ending in sight and people are getting discouraged from reading further and losing interest. Meanwhile, Kimetsu not only had an incredible anime adaptation with a movie looming on the horizon that adapts a canon part of the story, but Kimetsu is nearing its conclusion in the manga, with hype and anticipation at an all time high so people went and bought all the volumes to marathon read it and catch up quickly with the story rather than risk getting spoiled by waiting.
We are now seeing a paradigm shift in how Shueisha and Jump push new series. No longer are the days where they milk series endlessly or for more than a decade. Instead, we will now have more focus on series that last in Jump for around 2-5 years and are packed properly and cycled out accordingly for new content. This will end up resulting in a larger variety and stronger quality of content in Jump.

Whether the mangaka wants to continue with it or not is their choice but it's not really a choice that will be made easy by Shueisha most likely lol. Although Nakano did say that AC taught him to let series end when they want, but this is probably a special case where it's just selling too much to not atleast press the author.

The movie is going to be an event, nips speculate atleast 5billion yen box office for it (although corona might get in the way of that and force a delay).
Basically everything with the name on it is doing insane. WSJ's small gachashit game trended #1 on twitter just due to announcing a KnY character and when the event started today the servers were crashing left and right.

Ironically enough, ending the manga here and having the anime continue to fully adapt it might be MORE beneficial to volume sales in the long run. Because people will know they're getting a complete story, they'll be more likely to get interested in the anime, which will in turn bring in new audiences, which will keep the volume sales up even after the manga has concluded.
