Because it symbolizes.. actually no, it is actually straight up revenge for what Guts and Casca did to him while he was weakened. He was immobilized and couldnt move. He watched Guts become everything he wanted to be for the Band of the Hawk and he had his own cuck scene where he watched Guts and Casca through the back of the wagon develop a deeper love for each other. He had no tongue to scream "NO STOP". It drove him crazy to see Casca taking his potential gay lover. So he raped her in an attempt to break Guts' affection for her.
