I think your list is meant to be reversed. Deen/Stay Night is a terrible adaptation and doesn't capture the supposed "atmosphere" of F/SN at all. Only superficially with its mid-2000s artstyle.
UBW is a more faithful adaptation, with HF reaching fanfic levels of writing due to Sudou, but still better than DEEN.
