Tsukuda was aware that he gave his main pairing bare bones in the story, and knew that a marriage in the last chapter wouldn't make any sense. For a pairing that was supposedly decided from the one-shot, he completely failed at developing it properly.

I like how Tsukuda didn't give a definitive pairing in the end because now I can imagine Soma getting with Megumi, or Hisako instead. It's not like anything past the Moon Banquet arc exists to me.

The only consistent, decent Sorina artist switching ships was one of the funniest things about the last arc.

It utterly failed at properly developing Soma/Erina. Even with El Hermano thrown in with the general idea of developing the pairing further, it ended up not actually using him trying to get with Erina to develop Soma/Erina. Then it refused to use the last few chapters to cram in development for them.

The ironic thing is Soma's illustrator Shun Saeki worked with Tadahiro Miura who does Yuragi-sou no Yuuna-san. Who hass done a decent to good job of developing the various girl's romances with the main character, and has managed to develop the plot such that he could show off potential endings for each girl. Which have only taken a few chapters per ending.

So it's really not hard to do, and if they were desperate for some advice they could have asked their old colleague for some suggestions. Instead they spent a bunch of time in the epilogue establishing that El Hermano was Erina's brother not Soma's defacto adoptive brother and resolving his plot, then went with the "10 years pass without romantic development" for the remainder.

The remember the author answer some interview, saying that he was trying to escalate the series to be more Shounen-y. I think his biggest problem is that he can't balance characters stuff with the cooking stuff.
