Why do you feel something has to "take it's place" in order for manga to survive? Nothing should be expected to fill it's shoes, or even try to "top" it. People will still be reading other things, and more series will come out that were inspired by one piece. Believe it or not, there are people out there who love to read manga that don't keep up with one piece. What about them?
