I guess I enjoyed xxxHolic because of Yuuko as a character. But the most interesting story-wise would be X for me.
They're all pretty different though. Depends on what you're looking for. Sakura is a cutesie magical girl show. Raynearth mimes that with traditional fantasy, isekai set up and adventure. xxxHolic is more of an episodic supernatural mystery, really character-driven. Chobits is a light sci-fi romantic comedy. X is a dramatic, apocalyptic epic etc. Tsubasa Chronicle is an adventure/epic but kind of relies on the knowledge of all the other settings. xxxHolic also ties into those if you read the manga, the anime avoids all the ties with that series.
