So transitioning the story to focus on wrapping up character arcs came at the right time.

What I would like to see are small stories of every character after the ending: how they are doing in raising their child (at least the MCs), how are they doing in uni, if they are living together, how are their fights.

It was good, until it was starting not to.
RomComs and Slice of Life have a very finite freshness duration; there are only so many chapters you can write before character dynamics become bland, repeating jokes become stale, and your ever increasing number of characters become convoluted.
The only manga series that seem to be able to marathon through hundreds of chapters have an specific goal in the end; Ippo still needs to be world champion, Luffy still trying to be Pirate King, Shin is still trying to unify China, Naruto was trying to become Hokage. Meanwhile, RomComs and Slice of Lifers by nature simply loopback/reset after every chapter with very little in the way of development.
