Shanks is a fatefag, he managed to piece together what was on Laugh Tale, the void century, and everything else. He felt obligated to fulfill Roger's destiny and was looking for the right D candidate. Initially, he thought Blackbeard was the one, and he did it quite forcefully, basically grooming him to be the one to fulfill Roger's will. Shanks told Blackbeard everything, but then something bad happened. A serious betrayal of trust and a fallout between their relationship happened, and Blackbeard attacked Shanks (this is why he says the scar still aches and why he mentions he wasn't letting down his guard). Blackbeard abandoned Shanks, took what he learnt from him about the true nature of his destiny and began his scheme to find the Yami Yami. As a result, Shanks felt like a failure, and almost pulled a Buggy; a former Roger pirate, just hanging out in the East Blue leading a simple pirate life and gradually became much weaker. Shanks spent a year in Luffy's village. There he meets Luffy, another D, but he tries to put that life behind him, which is why he didn't want him on his crew despite his crewmates saying to let the kid join. However fate comes back to haunt him as he is suddenly faced with a situation where Luffy would die, and he also saw how he got himself in that mess. So he saved Luffy, but this time, he willingly let his arm get eaten, because he was both much weaker as a dreamless broken man, and because he knew that being too much of a fatefag ruined blackbeard, so this time, he did it to impress onto Luffy just what type of life you must lead to become a great pirate. Allow him to follow his dreams, not force fate on him. And he was right, as Luffy seeing his hero lose his arm due to his actions left a deep impact on Luffy. When Luffy shouts that he is gonna become King of the Pirates and find One Piece, Shanks is no longer a broken man, with rejuvenated purpose, he leaves East Blue and becomes a Yonko 6 years after leaving Luffy village.

It wasn't a fair fight, it was a "push the innocent child out of the street against oncoming traffic" scene. Like most of those, logically it should be doable without getting killed, but it's a cheap trick to create drama.

Up until luffy learns armament haki anything sharp or pointy can hurt him. pre-haki OP wasn't like dragonball where being strong meant you become immune to all attacks, knives still cut if you get hit. Shanks got bit and lost his arm trying to get to luffy in time, it really isn't any more complicated than that.
