No. There's no single "official version", there's the original series and a ton of approved spinoffs. Obviously you're going to see Rebuild promoted a lot more now because it's new, high-budget, and shiny, but until Anno says "every other version of Evangelion is now fake, only Rebuild is canon", then every officially sanctioned version of Evangelion is canon, they're just alternate universe versions of the original. The rails with branches leading off are probably meant to look a bit like a stream of time that splits off and goes on different ways, you're over thinking it.
