It used to be around 300-500, but that was 10 years ago. Now I'd unironically say 1000 shows.
In general though you need to watch enough to be able to have a good grasp of the major trends of the past 20-25 years, as well as the "classics" of each era.

I'm not saying we should have tests or anything of that sort to be able to post here, but what's wrong with advocating that people learn as much as possible about anime?
