Techniques are invented, discovered and learned.
There is no reason to assume that someone could not discover how to harness the ki of sentient beings by itself.
Ki drainage as an ability/technique in and of itself is not something only done by King Kai.
And it was not that Trunks was draining their ki (like a generic Spirit bomb in which Goku has to ask for ki) the people surrounding him where channeling their ki to him, because they had faith in him.
If we assume that Gods are created by people (by faith), then we can assume that the humans elevated Trunks to a level beyond himself.
DBS' overall theme is that mortals can surpass the Gods (and that the Gods are foolish).
I don't see how it is a cop-out when it was what the creators were going for the entire show (in terms of the theme).
Zamasu had his name from Shamash, the Babylonian sun god, as in, he thought that he was the light and was blinded by himself in the end.
It made sense that not the Saiyan Gods, but the combined effort of the mortals whom he had terrorized and called inferior, were the ones to defeat him.
He had broken his sword a couple of moments before and the faith of the humans restored and improved it.
The effort of Trunks not giving up and going past his limits combined with the faith the others had in him was what made Trunks win.
What is a God to an unbeliever? Nothing and Zamasu was, almost, defeated as such.
And believing in oneself, having faith in oneself, is one of the biggest powers in the Dragon Ball universe.
According to Akira Toriyama, ki is made up of three parts:
Genki (元気 lit. "Vigor")
Yūki (勇気 lit. "Courage")
Shōki (正気 lit. "Mind")
It's not the same as simple physical strength.
So, I think that there's a misunderstanding and that some are simply projecting their own interpretation/desired outcomes of the events on the show (it's a show from an non-western perspective after all).
