That's just because it's a mystery! They won't spoil the identity of the bad guy in a mystery novel until the very end? That's the same for the grail, its existence is a mystery which you end up beliving lies that Rin and Saber tell you because that's only what they know.
Magic isn't real. Why would an unpredictable plot twist like that even matter when the explanation is just a bunch of fictional magical contrivances. At least it makes a reread/rewatch cooler, I guess
