Because it had no prospects beyond manga sales. They couldn't market anything else and though the anime did okay, SJ didn't feel like keeping it so they told him to get it done and get it gone.

Yes, except that no one wants to discuss what they already know is a complete trainwreck.

Because Azami was a smug asshole that reveled in his douchery while Endeavor never cracked a smile at anything.

Azami arc fucked up the power scaling irreversibly. It effectively implied that Souma and Erina would have not had any more challenges from inside the school anymore. Souma and Erina should have lost their final battle, only for Rindou to switch sides and win for them.
And then El Hermano appeared and fucked it up even more.

Azami arc would've been better if it was the ending, and as such it should have happened much later in the manga.
It felt like it just came out of nowhere, and there was still so much more that could have been done with developing the existing characters.

After the tournament arc where Soma loses, the author decided to put in Erina’s dad arc where losing is not an option and Soma has no option to win.

He was already framed a Gary Stu early on, but the show was slowly getting rid of it, until that arc. The author decided afterward to make Soma clean through the entire arc winning everything

I hate when this shit happens, that is really enjoyable manga being shit up with awful endings.
Shokugeki no Soma was probably one of my favorite shows to rewatch because it was a much more relaxing show that still had the excitement of usual shounen.
I wanted more of the Sol type moments, like when Soma teamed up with Nikumi to make a karaage to help his home district, and other stuff like that.
I also miss season 1's op and ending, and it genuinely had a great soundtrack in general.
It just sucks so much seeing something you really like being butchered like this.

Yeah, I hate shit like that where he has no choice but to win, making it inevitable that he will win. Prior to that we had multiple cases of him not winning, and others where he only barely made it through, making things much more interesting to watch.
