Would be such an unsatisfying outcome, i don't think there's anyway to make a peace outcome work.
What's set SnK apart from other series in its genre is the subversive nature of the story, it's essentially a warning of what taking a typical Shonen power fantasy to its logical conclusion is.
Genocide ending is actually the only interesting way to end things, Lelouch ending(whether intentional by Eren or forced) is overdone but at least serviceable. A flat out peaceful ending where Eren backs away from his ideals just feels like a reversal of everything the series has been working towards.
