So far this show is rather.. generic. Entertaining, sure, but it doesn't bring anything new or particularly interesting to the table, it feels just like any other bland, cheap shonen that manages to keep itself fun.

If you're a 30-year-old boomer who grew up reading Naruto, Bleach and other generic battle shonen, it's not really special. It's not awful manga but it's clearly babby's first battle shonen (like it's supposed to be, it's manga for young boys). I can understand why someone who has never read much stuff like this would get so into it, it's easy to read and rather entertaining.

The show peaks in the first season so if you aren't particularly enjoying it now I can tell you that it won't be getting better.
As for why it was so popular to begin with, it was because Deku started off as an actual underdog character and every little accomplishment felt monumental and earned. Deku only being able to use OfA as a last resort and forcing him to fight actual super-humans with nothing but knowledge and quick thinking was the winning dynamic of the series. That pretty much goes away when Deku learns how to use OfA without self-destructing and it devolves into unironic "just punch him harder" fights.
How about Deku has the quirk to copy other peoples quirks. Since quirks take a lot of experience to master, he is stuck using neutered versions of people's quirks against them and has to use creativity and cunning to come out on top.
It doesn't really matter what powers Deku has or doesn't have. Horikoshi is just a shit writer and will ruin it regardless.

MHA is below average even for a shonen character development wise. But in the end it all comes down to the manga not having a plot, so everything is just completely static
I wouldn't say that the characters in Hunter x Hunter develop that much, but their characterization is pretty superb so check that out if you haven't.
