Because it's one of the distinguishing features about this story vs nearly any other time loop one. Life matters, death isn't fun, so the author isn't going to say he died ten thousand times oh wow how horrible with no context, he's going to show you each and every painful death and how utterly awful they are.
Also as of arc 4 he's making a conscious decision to not 'get used to' death, so that he never forgets either what he's going through or what other people are going through. There are other IF stories where he does loop hundreds of times and doesn't care and he's more jaded and cynical as a result. He treats people's lives like you might treat the characters in Fire Emblem game, if they die you sigh, you reset the game and you move on. You might even get mad at characters for dying because they messed up your plan on complete random chance and while trivial to you it's just annoying to have to waste your time resetting and trying again. He's actively avoiding becoming like that, he wants death and life to mean something. Now does he get better at killing himself? Sorta yeah, it's a little context dependent but he can work up the nerve to reset himself if he really wants to, he just doesn't have to do it a lot.
Pretty sure he hasn't died as may times as Bill Murray did.

The series really isn't for me, I guess. I read Arc 4, which was mostly entertaining but I really didn't like the ending or all the Emilia stuff.

If you actually paid attention in ground hog day he stops dying when he stops killing himself. He just lives the same day over and over again restarting at midnight, dying has nothing to do with it.
Groundhog Day has an important influence, that being Existentialism and Aristotelian Ethics. He wants to enjoy the fullest of life but realizes doing the same thing over and over doesn't amount to happiness. That is where the existentialist hits. The Aristotelian Ethics kicks in once he helps all the citizens of the town and eventually gets his wish.

In Groundhog Day, Phil wanted to die.
He kept killing himself because he was experiencing what he felt like was his personal Hell.
That's how he got used to it, he hated the situation he was in, until eventually he made peace with it.
Subaru on the other hand doesn't want to die. He wants to win. He wants to live "the life". What "the life" is changes a bit throughout the series as his character develops, but he very much wants to be alive.
The issue is, that while Phil kept killing himself, he didn't care if he runs out of lives, or falls into a situation where he doesn't come back again, or is stuck in a bad spot. If anything, Phil was looking for a way for it all to end.
Subaru can't get over death, because the issue of not knowing the rules is very real to him. He doesn't know if a specific magic effect like his body being taken over will remove his ability, or let whoever overtook his body steal his power. He doesn't know if there is an invisible life counter that is going down. He doesn't know when he dies if he'll go back to the last time he woke up from death, or if the time spot would have changed.
For him to "get used to death", he'd have to break as a person to the point where he ceases to care about his survival or even the achievement of his goals like protecting Emilia completely and given entirely into experimenting with and manipulating his powers.
Which as readers/viewers (especially those that know where the power comes from) might seem like a good idea, from his perspective is worthless; because while he'll "probably" come back, he'll "probably" be in the previous reset position, there is always the chance that it will be the last time he dies, and with that he loses every chance to accomplish his goals.
This is why the only times so far where he willingly walked/jumped into death were when he saw a situation where he can simply not get what he wants.
TL;DR: Phil only got over death because he was seeking it.

Because killing himself over that would be the epitome of brattiness. He's done dead, nobody he likes is dead, he just made a colossal ass of himself, which he's had personal experience with before already. You can see that even after going supreme gentleman on Emilia he still views himself as only doing right and he's just looking for a way to one up Emilia. He's excited that Rem tells him something bad has happened again, because he's not thinking about what that actually means, he just gets to show Emilia he was right. It's not until he sees it up close, for real, that he realizes what a fuck up he was being, it just doesn't hit home until there's a literal pile of corpses in front of him. Moreover it's a challenge that he can't even wrap his head around solving himself, he thought he could maybe fight those dogs, he has no clue what to do about a god damn space whale that deletes you or Uncle Pete and the crew.
As a final note, his last checkpoint was over two months ago, as far as he is concerned if he dies here or kills himself here he wakes up right back at the mansion with Rem and Ram questioning his sanity. He completely lucked into getting Rem to like him as much as she does if he resets that who knows what she'll be like, plus all the other adventures, moments and experiences that have now been wiped out.
