Grand Servant containers are for heroes of those Classes that can best utilise them to fight Beasts. That's why while Solomon COULD be a Grand Caster, so could Gilgamesh and Merlin.

Orion qualifies chiefly because he is both very strong and very skilled with his bow. If you compare the way he sues his bow to the way Artemis does, you'll see that his form when he positions, aims, pulls, and fires his bow is perfect. Other Servants could also be Grand Archers if they qualify for the container.

So what are the other qualifiers for Grand? Saber is probably some plot contrivance and it seems that Caster requires clairvoyance and Assassin requires you to be the absolute best at murder.

Grand Rider: One thing that's always stood out when it comes to the Rider class is that the Riding skill that comes with it always comes with a clause that states that dragons fall outside its jurisdiction. Whenever a Servant CAN ride a dragon, it's noted that they're a special exception, namely Martha and Quetzalcoatl. It's outright stated that the ability to ride dragons is a completely separate skill that falls outside of the Riding skill that comes standard with Riders and Sabers, but what that skill's actually called has never been stated. Thus, I'm willing to bet that one of the qualifications for Grand Rider is possessing that skill. If my theory is correct, then we should probably look for heroes who were explicitly famous for riding dragons and see if any stand out compared to Martha.
Grand Caster: Clairvoyance is one of them, yeah. That said, this doesn't necessarily mean that Gilgamesh qualifies, as while he does possess clairvoyance, he's not actually a magus and doesn't properly practice thaumaturgy.
Grand Assassin: The ability to kill things really good seems to be the main thing. King Hassan is special in that the Evening Bell grants him the ability to kill pretty much anything; however, he has no control over when or for whom the Evening Bell tolls.
Grand Berserker: This one's kinda troublesome. The only real qualifier for the standard Berserker class is that you must have gone insane at least once in your life, Beowulf being an exception. I somehow doubt that the central qualifier for Grand Berserker is "being the craziest of all crazies"
