it's possible that the lion is the avatar of the dungeon and not the demon per se. the winged lion iconography is present through the whole dungeon, it wouldn't make sense for the demon trapped inside to advertise its presence everywhere? and it would still make sense that the dungeon is wary of the canaries, since their MO is to destroy the dungeons with demons in them.

I think the winged lion is using Laius to get closer to Marcille. Her ambitions are way broader in scope than his are (considering how excited she was to hear that she'd died and been revived in that one flashback, I think she's trying to invent immortality: Laius just wants to be a benevolent king), so if demons prefer people with complicated goals, she'd be the perfect target. In particular, she appears to know about open portals to the other dimension, but doesn't seem to know that there are demons there; maybe the plan is to have her summon lots of demons without realizing it?

The city says the lion is the city's guardian spirit. So it sound like its a thing that predate the dungeon. And was the spirit of the town when it as just a normal kingdom.

I think it might end up with the two sides (demon vs Guardian spirit who made the dungeon) having their eyes on different members of the same party (laius vs marcille)

Laius Thorden waited. The torches above him blinked and flickered. There were meals in the dungeon. He didn't see them, but had expected them now for years. His warnings to Marcille were not listenend to and now it was too late. Far too late for now, anyway. Laius was a dungeon explorer for many years. When he was young he read about the Monsters and he said to Farlyn "I want to eat the Monsters, sis..."
His Sister said "No! You will BE EAT BY DEMONS"
There was a time when he believed her. Then as he got oldered he stopped. But now in the Dungeon he knew there were meals.
"This is the Lion of Power" he heard in his head. "You must eat the monsters!"
So Laius gotted his molluks sword and cracked open the monster.
"HE GOING TO EAT US" said the monsters
"I will fire at him" said the dragon and he blew fire towards him. Laius sworded at him and tried to stab him. But then the walls shifted and they were trapped and not able to eat.
"No! I must eat the monsters" he shouted
The voice in his head said "No, Laius. You are the meal"
And then Laius was Dungeon Meal.
