Yeah, the show has a serious disconnect between treating Subaru like a designated harem protag who can do basically anything and still have cute girls hurling themselves at him but also wanting to be this dark, serious story about despair and suffering.
It's easy to miss since we see everything from Subaru's perspective, but Emilia's attachment to Subaru makes absolutely zero sense. They've hardly interacted with each other, and have had at least one major "Subaru works himself into a frenzy and screams at you for not reading his mind" event. At least Rem's infatuation is easily explained by her being an emotionally shattered wreck of a non-human.

As far as any stupid actions he does, she's under explicit orders to let him do them, she even expresses in the anime that she disagrees with him going to the selection at all because she knows he's going to be a dumbass. The anime then stupidly takes a shortcut by just having him pressure her into telling him where it is when in every other form of media he 'tricks' (read: she let him go, again, because she's under orders to not get in the way of anything he wants to do) her and makes a run for it and then has to find out where it is in a different way.

He is, he mentioned what his goal was, he's going to nuke the ever living fuck out of the guardian dragon. Obviously if she's going to be a making a pact with that it would be helpful if it wasn't nuked into oblivion but he ultimately doesn't care what Emilia wants and she won't know presumably until he just goes nuclear clown on it's ass as soon as it shows up.

This one isn't conveyed well in the LN/WN, but pretty much isn't conveyed much at all in the anime, but he does spent time with Emilia nearly every day, just hanging out and meme flirting. Now he still spends more time with either of the twins, since he works with them (Ram more than Rem, typically, he slows Rem down too much and she's load-bearing for keeping the mansion running)
However, he does have some reasons to like Emilia.
First, she's his dream girl. Like seriously, she checks essentially every box he has, elf, long sliver hair, 'big sister' type, etc... physically he could probably not make a better waifu.
Second is that is personality is more like a dog that won't let go of anything he's bitten, even if he later learns that was a terrible idea he recontextualizes what he's doing and tries again. This is as much a virtue as it is a flaw and it comes up with a lot of things, including why he doesn't fear Rem and Ram for killing him.
Third he does want to be the dumb isekai MC. He keeps holding out hope that that will happen and it'll be awesome, with a win under his belt from Elsa and the dogs he got cocky, not helped at all by Rem consoling him (he actually pays very little attention to what she says and up until she dies a couple times for him really considers her more of a dog for his comfort than a person most of the time)
He's a clown in anime, how did you know realize he was an asshole? That said, I actually think his side of things is incredibly interesting and I'm more interested in how the Roswaal, Rem, Ram, Dragon stuff shakes out than the main plot so far.
Finally, he's scared shitless. His home life wasn't bad. He had no friends, but his parents and fun, caring and supportive, he's terrified of being alone in a world with nobody. Due partially to point two, he's latched onto Emilia, and he's not going to let go because then he would be alone and that thought absolutely terrifies him. It scares him so much he barely even acknowledges that it motivates him at all, it's not until he's later confronted with his parents that he really reflects back on how homesick and scared to never see them again he is.

I can tell you some random trivia-type things, but ultimately I can't spoil you on that, we have no idea what the dragon's deal is aside from that it probably lives off the edge of the world, or can at least fly off the edge of the world if it wants to fuck off from everybody. And the already established statement that the Sage, Hero and Dragon sealed Satella, and that the kingdom is the Dragon Kingdom of Lugnica and that it somehow blesses the land. Just know that the clown no likey the big lizard. And while Roswaal is a noble ninja tapdancing dick wizard everyone describes the makeup he wears as clown makeup (he personally considers it a kind of warpaint for serious clown business)

At the end of the day, Subaru still saves everyone and clearly suffers for it. Even if he can't say it in words, his actions are good enough for them to get it. He could be less extreme about it though. He truly doesn't value himself enough and that's what really makes the girls upset. Imagine watching someone you love ramble about threats to your safety all the time, or watching your loved ones die over and over again before dying yourself. That's Subaru and the girls' relationship to each other basically.

Well Julius clearly isn't the kind of guy to kill someone. Subaru subconsciously knows this. It's just a pride thing, and everyone thinks he's a fool for this. Even Julius thinks he himself took it too far though.
He's not really like what Ainz' guys think he is. He's fairly fallible. However, he does know Subaru can redo events (he doesn't know the specific trigger else he would nuke memeboy everytime he did something wrong). I don't know if this is because the book strictly tells him so or if he intuits it again because Subar can do things against what the gospel says, which he considers infallible, so the only logical conclusion would be that Subaru can somehow fix history he screws up. He specifically encourages life-threatening situations to drive Subaru more obsessed with Emilia. He hired Elsa in arc 1 and caused that whole thing, while he doesn't seem to have hired Meili in arc 2, he's aware of her and 'leaves' when Subaru does the right thing to let that dog thing play out. Arc 3 he is well aware of Pete and the whale, but does nothing about it so he can set up Arc 4 where he's basically the boss antagonist. His ultimate goal is to bend Subaru to be obsessive towards Emilia above all else so he can use Subaru to get Emilia on the throne (she has no chance at winning without an obsessive cheat character on her team) so he can nuke the dragon and maybe fuck his teacher or something.
He actually just lucked out. He thinks very low of Julius and thinks the training swords and stuff are Julius looking down on him more, because he has no understanding of medieval court rules and etiquette. So he ran his mouth like the entitled millennial he is absolutely sure that nobody would kill him for it, because that's not even on his radar as a thing that happens to people.
Basically any other knight there was going to kill him in a duel, except Felix who is a technical pacifist (despite being the most pissed off), but Julius steps in to make sure that doesn't happen and beats him a lot instead.
