She thinks Subaru has the capability to be one of the greatest heroes, and she holds him to that expectation. Later in the series, "Rem's hero", is a title both Subaru and Rem use to describe Subaru.
He also was one of the only people to show her true kindness. To everyone else she was basically just a maid, but Subaru treated her like a friend.

Shield Hero is just an escapist fantasy like every other isekai. The whole point of Naofumi is to self insert into a guy that gets dealt the worst possible hand so he can be comforted by a cute loli raccoon later. It's just a cheap way to hook in the viewer by trying to rush an emotional climax very early on so that it doesn't have to put much effort into writing in the later episodes.
Trying to extrapolate this into real life situations does not work.
