The reason for sword colors isn't explored in the manga. You could make an argument that Tanjiro's sword is black because of his Coal Burner background and because it turns red once it is "lit" (aka Tanjiro uses Dance of the Fire God).

He never had any memory of it until that moment, and he was never even hinted towards having that ability. The writer decided at that moment that Tanjiro could use fire and threw something together.

They never talk about why swords are colored certain ways, and act as if swords are just tools. If this was ever mentioned, it was to cover up their ass post-asspull.
