They're standalone but if you watch them out of order you aren't going to understand many things about the world, factions and characters. Watch the original (SDF Macross) first and foremost; then it's up to you.
Macross: DYRL is a movie version of the original show; it's a really good, iconic movie but I don't recommend watching it without watching the original show.
Macross Plus is very different from the rest of the franchise so if you watch it first you're going to have the wrong impression about the franchise.
Pretty much every part of the franchise is stand alone, but I would say yes, it's better to watch from the beginning, and as far as shows go — SDFM is the best one anyway, so might as well watch it first.
You don't NEED to but I'd highly recommend it. You'll miss a ton of shit if you don't.

Do I really need to watch the post 27 episodes? Episode 26/27 was such a nice ending point, but then it goes on with this stupid ass Minmei triangle. I don't wanna deal with her douchebag liberal brother anymore, or Minmei for that matter.

Frontier is basically the final season and as such has tons of callbacks, I’d say so
I thought it was pretty cool how they deconstructed their own ending in episode 27 in the later episodes.
Singing a song doesn't actually fix the issues, and especially when the effect of the song is just the surprise of something new, when the people are used to music they become immune and go back to the violence they're used to.

would it be safe to just watch them in release order? skipping the ova/movies that are just recaps or retellings of previous seasons? i dont mind watching them all but just dont want to waste time if its not necessary

Release order is the best order. Also, some of the best content in the franchise is in movies/OVAs (like Do You Remember Love and Dynamite), so you shouldn't skip those.
Recaps like FB7 and such you can skip though, yeah.

The only recaps I remember are Dyrl\Plus movie edition and frontier movies, maybe Plus movie can be skipped if you seen the OVA, but Dyrl and Frontier movies are great.
The only movies that are actual recaps are the Plus one and FB7. DYRL and the Frontier/Delta movies are retellings with new content.
If you mean DYRL and the two Frontier movies, they aren't recaps in the way you're probably thinking. DYRL and the second Frontier movie are 100% new animation and the first Frontier movie is also mostly new animation.
The Macross Plus movie, on the other hand, is an actual re-edit of the OAVs.

I started with Frontier and went - Delta - SDF - Plus - 7. I had no trouble understanding or liking Frontier and Delta, but I definitely would've enjoyed them more I had watched them after their predecessors. SDFM and DYRL were easily my favorites though.
Mostly for the art\audio directing and amazing scenes, but in pretty much every regard it's just a good Macross anime at least for the set standard I don't understand why people dislike it as much as they do. Rather ugly CGI is not enough to turn me off.

You can totally watch DYRL without watching the show. Back in my day i had only watched Robotech (which obviously doesn´t actually count as watching Macross) before watching the movie. Didn´t watch the original show propperly ´till years later.

I think its probably because it lacks a lot of things people look for in a macross series. I would argue behind solid story and characters, most macross fans look for a good mix between good mecha/military aspect, good music, and good character dynamics/relationships.
And going through Zero, although its been a few years iirc:
The dogfights if you ignore the CG are nothing too special, and I remember being a bit miffed about not getting more background on the unification wars or the anti-UN.
It might of had the weakest songs/soundtrack of the franchise. I do remember one good song (forget whats its called) but its no where close compared to the other series
Besides Roy the characters were kinda lack luster, hell I would even argue Shin is the blandest macross protagonist yet (he makes Hikaru seem brimming with personality by comparison) I will amid there are more annoying characters through the franchise, but Zeros overall cast where a little unremarkable.
I do think zero was a decent mecha show but as a macross entry it might of been on the weaker end

The Original, Seven, and actually I'd watch plus after seven even though it's a prequel. Most of the movies/OVAs are worth it.
The other series, it depends. If you absolutely love those first three things, go wild. It IS interesting to watch music get...gradually more weaponized and become a terrible thing by the end of Delta... feels irredeemably *human*.

Watch Plus and 7 for continuing the canon in different ways what happened to Zentran/Meltran during times of peace
Watch Zero as a prequel setting up some of the deculture shenanigans, it will feel less spacey since it's set between WW3 and SDF
Watch Frontier for more canon and enjoy the music before the Idol shenanigans really hit the wall
