With manga, you don't write your magnum opus first. You write something you think will get a lot of readers, suffer for a few years, then end it and force your publisher into a contract where you own the rights to your next series.
This is why Togashi is smart. He wanted to be free of restrictions and sleep, so he did.

Publishers of course would rather not hire one, be one known to do such a thing, so many elect to not do so.

It's more likely that Isayama doesn't own the rights to AoT because no publisher in their right minds will give majority shares of an IP when the author is clearly an amateur artist. No wonder Isayama started using ideas from GoT after the basement. Because he doesn't want his real ideas to be used in a story he doesn't own!!!

AFAIK mangaka generally own the rights for works they create or at least it's a shared copyright between the creator and the publisher.

This is in no way rare. Editors commonly sabotage manga and light novels in order to morph them into what they would prefer them to be, and then arrange for cancellation when the author doesn't play ball.

He had a manga in WSM called Vector Ball. According to info on the internet, he didn't know what to do with the story, and end it after a year.

Oda's editor pushed for him to make Sabody more interesting by adding a new character or two which is why we got the Supernovas and Worst Generation plotlines. All of that was right on the spot and then Oda worked them into his full narrative. I believe he said his editor was taken back by just how overboard Oda went from his suggestion.

Often editors insist on adding characters that weren't in the original draft, the reasoning behind this depending on the circumstances. Two good examples of this are Vishya from Youjo Senki and Albedo from Overlord; both of which where added at the insistence of editors. Why? Well, my guess is that a subordinate character in those stories made the protagonist less lonely and gave them someone to delegate tasks on occasion. But only the editors in question will ever know for sure.

Female manga-ka working for Shueisha often hide their gender for a reason. That's why people think the KNY's manga-ka is a female. Because even the editor doesn't know the actual gender. I think D. Gray Man's manga-ka once talked about having panic attacks at the thought of people learning she was a female or something like that too.
