IBAN payments require you to know the beneficiary's name, not to mention the first characters of the account are the country the account is registered in.
A mismatch between the payment's beneficiary name and the name registered to the account will raise a few red flags.

Too expensive in my country. If I had that kinda money I wouldn't be doing this, it's that expensive. But that kind of stuff just seems fishy, what would I do when someday (((legal men))) come and try to see from where and why my profit comes?

IBAN payments can be made without a name, and few modern banks outright require a name. Even most Banks that 'require' it will allow it to go through with a wrong name. As for the country, OP said his bank account is not US-based, which implies he's American, so the country code won't reveal his location.

you can hide your identity from the costumers with anonymous LLC. Obviously you will be taxed and it's not really anonymous to the state. but it's probably not the answer in OP's question so just use an online payment that doesn't reveal your name

Why no PayPal? Just have the display name be some dumb bullshit, and get a PayPal debit with your real name to access the funds. That's what I do.
