Blue rare is fine if you know the quality of the meat is there. Most of the time, it's not, so I go rare, or medium rare if I fuck up and let it rest too long. Both are fine. Well done is burnt, a waste of perfectly good meat.

I was raised by "if you need steak sauce/ketchup, it's overcooked". And it's true. If you drown steak in A-1, you don't like the taste of steak, you like the taste of A-1.

Been eating rare steak my whole fucking life, never had an issue with "intestinal parasites" - the kind that come from raw beef are rare in the US, and as long as you buy quality meat, it's not an issue. But if you buy beef in savage third world countries and eat it blue raw, you're playing russian roulette with your guts. And, it's treatable and rarely fatal, unless you live in a tin shack in a favela or rain forest.

steak is warmed enough in the core that it kills worms and parasites. some bacteria may survive it but proper aged meat doesn't have them. it's already basically not even raw from the aging process which alters the proteins and connective tissue breaking them down.

I'd eat it raw if it was safe. Imagine being able to just grab a cube of steak straight from the fridge and snack on it.

Dried out, tasteless, chewy, tough. Often drowned in sauce, especially some shitty tomato-based sugary steak sauce, so that it can even be swallowed. Most people order this out of an irrational fear for food poisoning, despite the fact that a steak becomes safe to eat after touching a hot grill for mere seconds. Anyone who claims they enjoy a well done steak needs to be educated otherwise. This is not a preference, it is just plain ignorance.
