Farmers are dumping milk / eggs because restaurants are closed down and that's who bought a lot of it. They're dumping the extra because they're not about to just load them on a truck and pay the shipping costs to give it away for free.
Stores are / were rationing off quantities of select items because 5 people will go in and clear out the entire poultry and beef sections. A lot of it is brought in by like Purdue or whatever but there's also the store brand which is packaged there in house so guys are back there getting it all ready to go and can't keep up with how fast hoarders are hoarding.

These are huge corporate farms. If you want to actually do what you're suggesting then you'd want to go somewhere in like Oregon, Idaho, or Vermont. Theres a lot of small farmers and communes there. From farmers Ive talked to it's hard work and it's all day every day. You're better off just buying it and maybe doing some really small scale stuff of your own as well as hunting if you want to be more self reliant.

Something can be low complexity but still high effort. That's what manual labor is in a nutshell. Farming is a lot more than just manual labor though and I don't really think you're giving enough credit where it's due.

Acres upon acres of land and the farmer gets a pittance for all his work. I'd like to try be a self sufficient farmer (for myself) but not for companies that will give me a pittance when i can just go sell the excess as a way to supply my other needs

all you have to do is grow corn in the midwest and haul dry corn to the feed mills during season. you make shit tons of money and being on an agricultural exemption you can haul almost limitless weight and no hour of service rules

It's just the kind of cuts and type of meat people buy at the grocery store. It's different than the meat sent to restaurants and other food service types. Since more people were eating at home there was a bigger demand for store-bought meat and those kinds of cuts. Suppliers are having to retool their lines and divert more meat to get to the grocery stores. Grocery stores mostly don't have their own butchers so it's not like they can cut whole slabs by themselves and take some of the workload off the slaughterhouses.

Farming is high complexity and low effort. You already have a perception that it's an impossible job because they have done well to market it as a difficult profession. The most difficult part of farming is getting land that is capable of being farmed and having enough money for the initial seed. The rest is simply a matter of enough education and information. The farmer lies straight through his teeth to you and he lies to himself too.
