Holy shit this is an embarrassing. The entire point of the Sopranos is that Tony's identity is fixed. He can't change in the long-run because he's incapable of doing the heavy lifting it would require for this to happen.

No, you seem to have missed the point entirely. The Sopranos is great because it was a show about characters lives. Saul is emulating this same type of approach, people really don't change under normal circumstances, their identities hold them hostage. Breaking Bad shows how Walt changes, but its only under extreme circumstances. Normal people don't do this, it isn't a realistic portrayal of character growth, its an edge case.
