Why would they even bother defending the whole garden? It would be fine outside the walls for the rare occasions they are under siege.

During a siege wouldn't you want guys manning the outer walls to shoot arrows at anyone who attacks? In that case how would they transfer guys to the outer walls if the bridges are up? If they don't transport them then how do the guys on the outer walls get food?

once the outer wall falls to enemy hands the inner wall doesnt provide any range or even vision advantage to the defenders anymore and the attackers will have a much easier time throwing shit into the castle from their nice vantage point, no to mention that you can then proceed to undermine part of the outer wall so it collapses into the moat and fills it enough for you to use ladders or even get a battering ram to the inner gate

in the books it describes WinterF as having green houses, and basically describe buildings made of glass or with glass roofs so that is part of it. Also I assume winterfell gets a tribute of food/crowns from his Banner men

Sure they lead the north but they literally live in a desolate snow covered waste. They don’t have the supplies to upkeep a castle the size of something even like Riverrun
I don't think this can be accurate. Most castles had some form of citadel that was much more difficult to take, and you are prevented from using bombardment weapons if your own forces control some of the castle.
