There were famous people on that boat. At the time was the largest boat that had ever been built. And, it was supposed to be unsinkable, but sunk on its first voyage. Not necessarily relevant, but very memorable and tragic.

It really is insignificant, it's as useful as any piece of stupid trivia. A large boat sinked once , people died that's it.

It was centered around a fictional love story because that is the only way Cameron could get a studio to agree to fund the film the way that he wanted to film it, and to agree to subsidize his trips to the actual wreckage. There was an interview he did at some point where he flat out said that he threw together a generic Romeo and Juliet story in order to hook a studio into agreeing to fund the film.

He filmed a ton of footage related to the historical figures and events, he just had to cut it because of the focus on Rose and Jack. In addition to the actual deleted scenes, there's a lot of B footage that was later released as part of "James Cameron Titanic Explorer" showing things like the people struggling on overturned collapsible B, showing third class passengers trying to find their way in the maze of the ship up to the boat deck, etc.
