Who is the better villain and why is it Thanos?

If we are going by film universes, Thanos has actual character development and motivation beyond “wants to rule all”.
If we go by books, Sauron and his role as a servant of Morgoth is well developed and makes for a compelling antangonist.

It doesn't matter if he thinks that reducing the population would be better. The end doesn't justify the means. That is like if I would want to kill half of the population in Africa or some other overpopulated country because I think it would be better with less population in the future. Nobody would think that I'm a good person, they all would think that I'm a crazy genocidal. Even if I'm right that it would be better with less population.

Thanos wasn't the villian. It was the capeshit "heroes" that brought back 3rd-world over-population, over-crowded cities, millions of cars on the road smogging our skies, poverty, accelerated environmental decline, etc..
And Sauron wasn't the villian either. He brought productive factory jobs to economically-disadvantaged orcs and uruks openly discriminated against by the human/elf/dwarf ptriarchy supremacist shitlords. He even enacted a student loan debt assistance program in exchange for their service in his army of interior decorators he sent to show how useful orcs and uruks are by doing exterior/interior redecorations for the humans in Helm's Deep and Minas Tirith (which the racists did NOT appreciate).
They're not fake, but you do have a point. There is so little about Sauron in LotR that it was not until the release of The Silmarillion that that it even became common fact that Sauron was a Maia.

I unironically rooted for Thanos in Infinity War, although if you had a magic gauntlet that could do literally anything, you'd think he'd have a better solution than kill half of everything.

Sauron is just a force of pure chaos and darkness. It seems impossible that the meek powerless Hobbits could even touch him, which just makes their journey more inspiring.
The story is about even the lowest among us having the power to stand up to great evil against impossible odds. How the fuck would that be improved by giving Sauron some retarded 'sympathetic' backstory?

an interesting perspective in the case of LoTR, since Sauron was defeated outside Barad Dur after a years long siege in his lands, got banished and had HIS ring/lifeforce taken, then settled in the middle of nowhere in a forest and got banished from there too after doing virtually nothing, and then after rightfully attacking the aggressors and trying to get his ring back they send an invasion force to his gates and destroy half his soul.
