There aren’t infinite choices, there are infinite permutations of all the other possibilities that could happen; weather, traffic, biological processes. At that point it’s just a numbers game crunching all that, there’s only really a set amount of choices for a given situation, and a vastly small amount of sensible ones.

Maybe it doesn’t. A lot of this show is based upon belief and faith. You have to account for that in the motivations of the characters. Do they believe it to be infallible, how does that color what they do etc?

Lilly destroyed determinism inside of the devs system, something that needed to happen to create forests many worlds heaven. Forest knew the machine could only see to the point of the destruction of determinism and that lily was the final piece in his selfish puzzle. She inside this system represented an unknown, mostly because it was only revealed to people who understood and at least respected the Laplace demon until then.

This explanation basically means you have to have knowledge of the system to break the system. Also don't buy that Lily is somehow special when Stewart showed signs of choice as well.

There aren't infinite permutations in the Many Worlds interpretation, just a very large, but finite number. The machine was able to measure a pretty small number of particles on a table to start a massive chain of inferring adjacent particles until they were apparently very fucking accurately simulating every subatomic particle on the planet at least, considering they saw goddamn Jesus. You don't have to suspend much more disbelief to accept that it could run a different set of algorithms where it narrowed down the possible universes until it determined ours.

For the second question, no fucking idea how to explain how Lily broke determinism, or, if determinism was wrong, why the machine couldn't see past her choice with either Forest's or Lyndon's approaches. It just makes no sense and pisses me off because I liked everything else about the ending, but the pivotal moment was a tremendous asspull

I think it is more, everyone made the choice they were going to make. Lily KNEW what the choice was, thus made the complete opposite decision. It’s not that she’s the first person to make a decision, she’s the first to know what the decision was, and defied it. Not counting Lyndon, the 3 in Devs only ensured they repeated what they had viewed onscreen, Lily did not, and the images on screen were the results of decisions made.

This doesn't work either though. For example, Forest and Katie watched the "last day" over and over and eventually knew everything that was going to happen. They would probably know if a traffic light didn't behave the way they had seen it, what the weather was supposed to be like (they first saw it "years" in advance so there's no way to know that) and whatever other shit happens that's out of your control. Traffic, the parking spot that's open at work. There's no way that everything outside of them that day would line up my chance.
Aside from that, if you watched footage of what you did for a whole day, or even an hour, with as many chances as you wanted to watch the footage, there's no way you could even intentionally perfectly replicate it on the first attempt. Or very closely replicate it.
And aside from that, others had seen forward and still done exactly what they saw they would. The scene where the nameless engineers watch 1 second into the future is fucking stupid to watch but in-universe there's no way none of them would try to do something different if they could

Forest's point before he knew he was going to die was that if every bit of information about him or his daughter was in the simulation/prediction/whatever, it's effectively as alive or real as him. There's nothing about him that the machine doesn't know, down to the atoms or however detailed they got
