Because it's hard to write a 90 to 150 minute script about an undiscovered and dangerous animal/monster without it being a Sci-Fi Channel Original-tier schlock horror/slasher movie where Bigfoot or the Owlman spends the run-time killing and eating teenagers.
There are PLENTY of schlocky horror/slasher movies exactly like that, dating all the way back to the 50's and 60's in fact. But that's almost exclusively where movies about Cryptids begins and ends unless you're talking about documentaries.
