1. Good old fashioned contrarianism
2. The prequels are now in the 20 year nostalgia zone. People who grew up with them are now grown up and feel a shit-ton of attachment and affection for them (despite their flaws). Hobbit won't be anywhere near that for another 10 years although Lord of the Rings is now in that zone.
3. Considering the sequel trilogy the prequels seem less bad in retrospect
4. There are some interesting aspects of the prequels despite their issues
5. The prequels got better with each installment and some people unironically love Revenge of the Sith. Hobbit completely shit the bed with Battle of the 5 armies and makes the prior two films worse by its existence. Sith meanwhile helps Phantom Menace and Attack of the Clones by existing (although that's still dependent on how much one likes Revenge of the Sith)

Star Wars was always shit, Lord of the Rings was mostly good to very good, the Hobbit took everything good about LotR and did the exact opposite.
It should have been one single 3h movie following Fellowship, one of the high points of modern cinema, as a blueprint as they tell a similar story.

The main issue with the Hobbit was the entire production process.
It was treated as a product rather than art thus we ended up with a focus tested consumer product.
It's like going on the same journey again but there's no reason to do it
The prequels are shit films but the world created within them, both in terms of the lore and visual design is incredibly interesting, perhaps even more so than the OT. Theres lots of great tie in material that explores it all better too. i think a lot of people that say they like the prequels really just like the era. Also has a great sountrack. People mock some of the effects nowadays but lucasfilm was really pushing the boundaries of what was possible at the the time.
