You have to make it a premium series with a pretty huge CGI budget. You CAN do a lot with practical effects, and certainly they SHOULD, but a lot of the demons will require CGI.
Start by filming the the Golden Age arc, split into 2 seasons. Open with Guts being born, focus on the brutality of the world in the beginning, then transition into politics by the end of Season 1. Season 1 is Guts growing from a child into a starting badass. Season 2 is all about the rise of the Band of the Hawk and ends with the...well you know what happens. Season 3 is when we see the Black Swordsman we know.
You'll likely need at least a decade to tell the story, but it could honestly be bigger than Game of Thrones.

How can anyone still care about Berserk at this point? You get 1 Guts chapter a year if you're lucky where 90% of the chapter is spent having the various children and faeries making goofy faces, and MAYBE you get an extra 4-5 Griffith chapters a year where nothing ever seems to happen that furthers the plot along.
