If we talk about things we can be absolutely sure of existing, the main one is ourselves, right? Cogito ergo sum. We might doubt our perceptions of other things. We have to take a leap of faith to accept the existence of objects outside of ourselves.
So once you take that leap and you build all these scientific theories around the observable world, how can you then go on to deny the existence of your own consciousness? How can you use models of things within our perception to disprove the one thing we know absolutely must exist?

all of that is true. but let me ask you: how do things happen in the world? why do things change? information gets passed around, states of things change, and people do things. our discussion can be determined from the state of the universe and its laws of changing state, yet things can still change and our discussion can still effect other things and be part of the change.

When you make a choice, you make a choice based on the state the universe is in. Keeping this in mind, if you went back in time to the moment you made a choice, it would be the same every fucking time, provided when you rewound, the universe was in its same state as well. There is no reason to believe one trillion out of one trillion times we run this experiment that you would choose any differently. We have no reason to believe you could. You are not the conscious author of your own thoughts, this would require you to think them before you think them.
