The movie establishes that changing the past doesn't change the future, because when you travel back in time you're not going backwards in your own timeline but actually travelling to a different one, an alternate universe. So Gamora not meeting the original Quill in the universe that 2014 Thanos came from doesn't matter. Pay attention to the movie

Taking the stones long term fucks up the bald one's timeline because her universe won't have the stones. The agreement is basically borrow the stones and return them timeline wise the instant they were taken. It's not causality shenanigans, it's just their literal absence. While the stones got atomised and can't be harnessed, they still exist in the original timeline. Eldritch bullshit starts happening if the stones stop existing in your timeline
