Because sex and ethnicity is part of the character's identity. There is no need to change them unless you imply that there is shortage of white actors in a 200 million production. Let's be real here: they change their ethnicity and sex because they don't want a full cast of white actors. It has nothing to do with adapting the source material.

Lets play the other side. Say that they were adapting a book where of one the main characters is a black woman. They get a white man for the part. There would be outrage in the media even though its exactly the same thing. And you would furious too because you are a hypocrite and dishonest.
