Both versions are good. The pacing suffers in extended and it adds too many scenes that were important in the book but really aren't necessary for the movie. On the other hand the theatrical cuts actually get rid of too much and several key scenes are missing when viewing them together as a trilogy.
If you want to watch them one at a time as individual movies I'd go with the theatrical versions but if you're marathoning them as one giant film project (which is what the films were shot as - all 3 films were shot and made simultaneously as a single film project) then go with extended. Both versions are good though.

ROTK theatrical has a lot happening all at once it's really jam packed, the extended version paces it out better and gives more context. faramir and eowyn actually talk to eachother for one.

The Twin towers suffer from how lengthy Helms Deep gets, and how little stakes there are. The main trio comes off as too op and detached from the action.
