I love this movie, but I always thought this use of bullet time was pretty stupid. Why didn't she do a sick move *as* the camera was moving as the other bullet times did? Having her just floating there was completely pointless.

Because it's visually unique for any movie at all. It highlights how insane all of the combat in this movie will look right off the bat. You take it for granted but this shot was a one-of-a-kind shot that set a trend for nearly two decades.
