A. Mordor is filled with all kinds of dark sorcery that could stop them from entering that way. Perhaps it would be a lightning storm that burns them to a crisp, perhaps it would be a poisonous fog, or hell, maybe sauron has one or two dragons tucked away somewhere. The point is that they just didnt know.
B. The eagles dont serve anyone except themselves. they help out gandalf occasionally as a favor, but they have no motivation to go on a suicide mission
C. Eagles are proud and vain. It is very possible the eagles could have been corrupted by the ring and would have killed everyone in the Fellowship to take it.
